Tapioca Honey Cookie

½ cup Butter
1/3 cup Honey
2 Tbsp. Brown Sugar
1 Large Egg
¾ cup Ener-G Pure Tapioca Flour
1¼ cup Ener-G Pure Rice Flour
¼ tsp. Cinnamon
½ tsp. Vanilla

PREHEAT oven to 350°. Whip butter, honey, and brown sugar together until fluffy. Add egg mix until creamy and fluffy. Add remaining ingredients and mix for about one and a half minutes. Place 1Tbsp amounts of the mixture on the baking try, about ½ inches apart. Bake for 8 to 10 minutes.
