Sweet Potato Mash
Oven: 350 degrees
Wash the sweet potato(s) and prick skin with a fork. Place in baking pan with small amount of water on bottom of pan. Bake for 45-60 minutes or until potato is soft when pierced with a fork. Cool.
When cool enough to touch, peel skin and slice potato. Place in bowl. Add 1 tsp butter per potato, cinnamon to taste and sprinkle of brown sugar. Use a potato masher to blend all together. Return potato mixture to a covered baking dish, garnish the top with walnut pieces. Bake for another 20-30 minutes.
