Sweet Cream Cheese Pie with Crumb Crust
Prepare crust as directed with substitute graham crust recipe.
1 8 oz softened gluten free cream cheese
1 can sweetened condensed milk
½ cup lemon juice (lemon concentrate not fresh juice)
1 tsp vanilla
Beat cream cheese until light and fluffy. Add milk, juice and vanilla. Mix until smooth consistency. Pour mixture into prepared pie shell. Refrigerate 3-4 hours
Topping: Use your favorite chilled canned fruit filling such as cherry or apple pie filling. For a fresh fruit glaze, use fresh berries (your choice). Puree fruit with a small amount of sugar or stevia. Ok to just use fresh fruit on top no sugar added.
