4-6 slices Tapioca Loaf Bread
8 Eggs
1 carton 16 oz. wheat-free cream of mushroom soup
½ cup organic milk
1 cup Shredded cheese (cheddar, swiss, or your favorite kind)
8 oz. Cubed ham
1 Tbsp chopped onion
Sea salt to taste
Spray the bottom of a 2 quart baking dish with cooking spray. Tear enough bread into pieces to cover the bottom of the pan.
In a medium bowl, mix together the eggs, soup and milk. Blend in onion, ham and cheese. Season with salt. Pour mixture over bread in pan and bake at 350°F for 30-35 minutes or until set.
Serves 6.
