Oven Temp:   400 degrees
1 Potato
GF Sausage
Onion- Diced
Sliced Mushrooms
Minced Garlic
Green/Red/Yellow Pepper
Tomato and Avocado- Cut in Chunks
Mexican Cheese
7-8 Whipped Eggs
Microwave the potato while browning the cut up sausage in a large cast iron, sausage aside.  Sautee the onions, diced potato and mushrooms in butter.  Add in the garlic, and peppers.  In about 1 minute add back the sausage, season with salt and pepper then add chunks of tomatoes and avocado.  Cover with a heavy layer of Mexican cheese and let melt just a bit.  Pour over the eggs and let cook covered till the edges look cooked, about 3 minutes.  Place skillet in oven for 12-15 minutes.  Remove from oven and let rest for 5 min. before serving.
This recipe is very flexible.  Adjust ingredients and seasonings to taste.
