Apple Bread
2 Med Size cooking apples finely chopped
3/4 cup olive oil
3/4 cup brown sugar
2 eggs
2 Tbsp greek yogurt or sour cream
1 cup Sorghum flour
1 cup All Purpose flour (see MJ's mix or use Pre-packaged brands like Bob Mill's or Pamela's
2 tsp baking powder
1 tsp baking soda
2 tsp Xanthan Gum
3 tsp cinnamon
1/4 tsp nutmeg and ginger
1 cup chopped nuts
Grease 8 1/2 by 4 1/2 loaf pan
Chop apples and walnuts, set aside.
In medium bowl blend brown sugar and oil together. Mix in eggs and yogurt. Stir in apples.
In separate bowl, sift together flours, baking powder, baking soda, gum, cinnamon, nutmeg, and ginger. Add chopped walnuts and mix well.
Stir dry ingredients into the apple mixture, mixing well. Spoon batter into loaf pan and let set for 20 minutes.
Preheat oven to 350, bake bread for 50-60 minutes; done when a toothpick inserted into loaf comes out clean.
Remove bread from oven and let sit 10 minutes before removing from pan. Cool on wire rack.
