For use in a conventional oven @ 350°
4 Eggs
1 cup sugar
1 tsp. Vanilla
1 ½ c olive oil
3 cups MJ’s flour blend or (use pre-packaged all purpose flour or 2 cups rice flour, ½ cup tapioca flour and ½ cup potato starch)
2 tsp. Xanthun gum
1 ½ tsp baking soda
¾ tsp baking powder
2 tsp cinnamon
2 cups grated zucchini
1 cup nuts, chopped (optional)
Mix the dry ingredients in a bowl. Blend eggs, sugar, vanilla, and oil together. Add dry ingredients and mix together. Stir in zucchini and nuts. Fill greased loaf bread pan (8.5” by 4” size). Bake for 50-60 minutes or until knife inserted in center comes out clean.
Note: I have added 1 cup of blueberries as a variation, however, use two loaf pans half full.
